Type: Hospitality James Beard–nominated chef Kyle Knall set out to establish a new French bistro in Milwaukee’s Historic Third Ward—one that captures the spirit of southern France while remaining grounded in Midwestern warmth and accessibility. The design leverages the existing building’s structure as an asset. Irregularly spaced columns are embraced as organizing elements, naturally defining a tripartite floor plan. This layout delineates three distinct dining zones: a lively bar area, a more refined south dining room, and a lower dining space oriented toward the river. Each zone is differentiated through targeted material and spatial strategies—variations in flooring, ceiling treatments, and lighting—while a cohesive material palette ensures visual continuity across the entire restaurant. Atmospherically, the space is driven by soft, ambient lighting paired with custom ceramic tilework and rich walnut bar detailing. These elements create a warm, layered glow that elevates the dining environment, reinforcing a sense of escape and complementing the experience crafted through Knall’s cuisine
